I've not attempted to make my own raw food. Mine do get raw food, but I buy it, so that's just a disclaimer, but regardless I will try to help...
There used to be a woman here who was extremely gung-ho about raw feeding. If you look back a ways in the "nutrition" section, look back to 2012, there are a ton of posts in there, tons of discussion, and recipes. Here is one such thread (containing a recipe and some other misc advice).
viewtopic.php?f=6&t=14306I think maybe what you are missing is at a minimum calcium (bone) and taurine. But if it were me, I'd be trying to use a recipe that was well tried and used by lots of others, rather than trying to re-invent the wheel.
I also have a book called "Natural Nutrition For Cats" by Kymythy Schultz. The book is kind of a dreary read because the book is around 200 pages long, and for the first 100+ pages, she just brow-beats you over the head for being stupid enough not to raw feed
. But finally at the end is the practical stuff where she describes what to shop for, and gives a bunch of simple to follow recipes. It's an inexpensive book, and they have a kindle edition of it, so you could have it and read the parts you care about in minutes:

Kind of like the book, I think that page is sadly, mostly about delivering a "beating" and less about the practical stuff
