A vet once told me that the fat in dry food begins to go bad after about a month and a half, but I'm sure it takes much longer before the food is unedible. I think it takes about 2-3 months for my cats to finish a large sack. I wouldn't keep a sack opened for much longer than that.
We don't have an all you can eat buffet for the cats, so there's no need to replace the food in the bowls. I wash the dry food bowls every couple of days (and the meat and moist food plates after every meal).
