The usual standard is to keep a kitten with the breeder until 13 weeks. This is so that the vaccinations can be done at 9 and 12 weeks, and the kitten can be observed by the breeder for a week after, to ensure he/she is fine after the last shot. To remove a kitten form it's mother at a younger age than that, is always a risk, and not the best for the kitten. At 8 weeks, a kitten is not mature enough to be removed form it's mom.
To be honest, if you were going to pay that much, it is worth waiting a few weeks more, and have the kitten at an age where it is mature enough to live on its own. The further advantage to wait till 13 weeks, is that the kitten has then be checked at least twice by the breeder's vet. Their immune system is still not string enough at 8 weeks, and you do not want to go through the heartache of losing a kitten because you removed it from it's mom too soon.
Whether that is a "good" price or not, is really dependent on the quality of the kitten. It can be an expensive price for a kitten that is not of good type, and with poor markings, but if the kitten was of good type, with good markings and a good pedigree, then that is a very reasonable price.
You really need to decide what it is you are looking for in your kitten as far as markings, type is concerned, and only then you will know if it is a good price for you. Remember however with the snows that the markings can be very pale in the blue-eyeds when they are small, so look at mom and dad to get an idea.
I ahve to say the sentence "other breeders will charge you more" also puts me off. A more expensive kitten does not necessarily mean it is a "better" kitten.
